The Program Change command is for just that, switching which instrument is assigned to a particular MIDI channel. I'm not an Anvil Studio user though, so I can't tell you how to insert that particular message in that program.

Nothing I know of for General MIDI, but there is the Korg DS-10 synthesizer that has a basic built in sequencer. There are probably also music-creation apps for the iPhone and iPod Touch.

How about a netbook? :P

As long as we're headlining Ace Combat 5 and Zero, Ace Combat 04 also deserves a mention for being ridiculously epic. Couldn't find a video with gameplay including the mission intro and not including some jackhole making worthless commentary over it.

Uo Poko (which has a quasi-sequel in the form of Mushihime-tama) is easily my favorite. Just among the Nintendo ones I'd have to say Tetris Attack/Panel de Pon and its variations.
